Lemon balm

Perennial. Okay in most locations and can have a tendency to spread. Use leaves raw in drink, salads and fruit desserts or ice cream. Mix into stuffings for delicate meats, but does not generally keep its flavour when cooked. Leaf tea said to be good for easing tension and as a memory enhancer. Attracts bees.

Melissa officinalis

Historic:

“Balm is sovereign for the brain, strengthening the memory and powerfully chasing away melancholy.”
John Evelyn
